Why Banana Pancakes?

  • Naturally sweet: Reduces the need for added sugars.
  • Nutrient-rich: Bananas provide potassium and fiber.
  • Simple ingredients: Perfect for picky eaters and quick breakfasts.

✨ Norland Nanny’s Easy Banana Pancake Recipe:

Ingredients:

  • 1 ripe banana 🍌 (mashed)
  • 1 large egg 🥚 (whisked)
  • 3 tablespoons wholemeal flour 🌾 (sifted for fluffiness)
  • Optional: a pinch of cinnamon.

Instructions:

  1. In a bowl, thoroughly mash the ripe banana.
  2. Whisk the egg and combine it with the mashed banana.
  3. Sift the wholemeal flour into the banana-egg mixture and gently stir until just combined. Avoid overmixing.
  4. Heat a non-stick pan over low to medium heat. Add a tiny drop of coconut oil or light olive oil.
  5. Pour small portions of the batter onto the hot pan.
  6. Cook until bubbles appear on the surface, then carefully flip.
  7. For extra fluffy pancakes, you can cover the pan with a lid to allow steam to cook them through.
  8. Serve warm with your favorite healthy toppings, such as fresh berries, Greek yogurt, a drizzle of pure maple syrup, or a sprinkle of cinnamon. 🍯🍓

Serving Suggestions:

  • Fresh fruit (berries, sliced apples, bananas)
  • Plain Greek yogurt
  • A drizzle of honey or pure maple syrup
  • A sprinkle of cinnamon.
